Daxo
The tentacle-like hand I saw on Twitter about a year ago. Tom Zhang's Daxo Robotics builds a soft, tendon-driven hand with no rigid joints and far more actuators than a human hand has muscles (108 at launch with Muscle v0, 120 now). Redundancy is the point: motors can fail and the controller routes around them. Zhang refuses to benchmark against the human hand, on the view that engineering to match it will always be suboptimal.
